เครื่องหีบอ้อย (อ่านว่า: เครื่อง-หีบ-อ้อย) คือเครื่องจักรเกษตรกรรมแบบดั้งเดิมที่ใช้สำหรับ คั้นน้ำจากต้นอ้อย เพื่อนำไปทำน้ำอ้อยสดหรือน้ำตาล มักทำจาก ไม้เนื้อแข็ง ประกอบด้วยลูกกลิ้งทรงกระบอก 2–3 ลูก ที่มีฟันเฟืองขัดกัน ในอดีตใช้ วัวหรือควายเดินวน ลากคานไม้ให้ลูกกลิ้งหมุน เมื่อนำลำอ้อยป้อนเข้าไประหว่างลูกกลิ้ง แรงบดจะทำให้น้ำอ้อยไหลออกสู่รางรองรับด้านล่าง เครื่องมือนี้สะท้อนภูมิปัญญาการสร้างกลไกทุ่นแรงของสังคมเกษตรกรรม

A sugarcane press machine is a traditional device used to extract juice from sugarcane for fresh juice or sugar production. It is usually made from hardwood and includes two or three cylindrical rollers with interlocking gears. In the past, the machine was powered by cattle or buffalo walking in circles to rotate the rollers. When sugarcane stalks were fed between them, pressure crushed the cane and released the juice into a channel below. The machine reflects traditional agricultural ingenuity.
